Fresh Tomato and Basil Chicken
This is a nice light dish for summer. Serve with crusty french bread or risotto to soak up the sauce and a green salad on the side.4 small skinless, boneless chicken breasts3 tbsp. rice flour1 tbsp. corn flour or potato flour1/4 tsp. salt1/4 tsp. pepper2tbsp. olive oil2 small shallots, minced2 cloves garlic, minced2 tbsp. balsamic vinegar or white wine3/4 cup chicken broth1 pint grape tomatoes,
