GFCF Macaroni and Cheese
One of the hardest things to give up after the family went gluten, casein and soy free was my mom's macaroni and cheese. Over the years I tried several different recipes, some fancier than others (4 cheese, anyone?), but none held a candle to my mom's. I guarded her recipe closely, always making sure I knew where that stained 3x5 inch recipe card rested. I gave out the recipe sparingly, but
Another Casein Free, Soy Free, Gluten Free Cheese (Daiya!)
I didn't think it would ever happen! There is a mozzarella style cheese that we can eat! I was resigned to a lifetime of no cheese on our pizza (which tastes just fine, but looks a little funny). There is now another vegan cheese out there besides Galaxy's Vegan Rice Cheese that is safe for those of us who need to avoid casein, soy, gluten, and corn (and it happens to be rice free too). I am

GFCF Chocolate Thumbprint Cookies
I made these the other day. Don't they look delish? The original recipe is by Living Without (here). I added strawberry jam because a chocolate cookie with a completely chocolate center seemed like too much to me (I like chocolate as much as any other gal, but only a little at a time). And then I added a little sugar to roll the cookie dough in to make them pretty. You can roll them in

GFCF Sweet Potato Shepherd's Pie
A friend of mine went away for Thanksgiving and came back with 40 pounds of sweet potatoes. Last week she unloaded some on me, whoo-hoo! There's nothing like a sudden excess of sweet potatoes laying around to stir the creative juices. Well, I wasn't terribly creative myself, but I found some great sweet potato recipes online. Like this one for Turkey Sweet-Potato Shepherd's Pie by Rachel Ray.

GFCF Sweet Potato Biscuits
I've been trying to make good sweet potato biscuits for almost two years. I have this one great recipe for them that has not converted well - my gf/cf versions always turned out dense and heavy. But today I found myself with 6 pounds of sweet potatoes and a hankering for biscuits, so I tried again using this Food Network recipe as my guide. And I'm excited to report that my biscuits turned

GFCF Chicken Potpie
The other day I made Crock Pot Chicken. I saved the cooking liquid/chicken broth and some white meat, intending to make chicken soup with the leftovers. Instead I ran across an old recipe for Old Fashioned Chicken Potpie by Cooking Light. Normally I'm not a potpie kind of girl, but the weather was cold and although I was in the mood for some homey chicken dish, I was feeling a little bored

GFCF Chocolate Graham Crackers
A friend requested a little while ago that I make her son a batch of graham crackers he could take with him on a Boy Scout camping trip, so he could enjoy s'mores around the campfire with the rest of his group. I decided to make them chocolate - a little extra special. I'm sure he must have been thinking "my graham crackers are better than yours!" at the campfire. I certainly think so! I love

Orange Breakfast Bread
This is one of my favorite breakfast breads. The original recipe (I can't remember where it's from) called for butter, yogurt and wheat germ but palm shortening, coconut milk yogurt and rice bran work equally well. The rice bran makes the end result ever so slightly dense, in a good way. I've also substituted nut meal for the rice bran and that works well too, making the end result ever so

Vegan Quinoa "Risotto"
I love everything about quinoa. I love its taste, texture and endless possibility. And now, I love it as "risotto". Here I've combined red with plain quinoa for texture but using all plain quinoa would make it creamier. To the quinoa I added the simple, everyday sauteed vegetables I had on hand but other vegetables would also work. To give the quinoa that extra creamy quality associated
Cider Vinaigrette
I've had this recipe sitting in my notebook for years. The original recipe is bundled with Field Salad, but I rarely make the salad. The vinaigrette, however, is good in many things - harvest salads, as a marinade for chicken, as a dipping sauce for nuggets, etc. My most recent, favorite thing to do with it is add it to Quinoa "Risotto". I imagine this vinaigrette will prove versatile for

Pumpkin Butter
I love fruit butters - apple, pear, cherry, you name it. I love pumpkin butter too. Although pumpkin is a vegetable, it makes a great jammy spread for everything from toast to pancakes...it's even good eaten plain with a spoon. I imagine it would be good warmed and used as a topping for ice cream, too. I've tried many different pumpkin butter recipes, and this one is my favorite.Pumpkin

Red Lentil Soup with Kale and Lime
What am I doing posting a lentil soup recipe on Thanksgiving Eve? Well, you can blame it on the kale.I'm a newcomer to kale. I've had an irrational hatred of it since college, where Physical Plant dug up all the pretty flowers on campus and replaced them with ornamental kale. I thought they were ugly. And a vegetable, not a fair flower. Nothing about them looked fair or lovely to me at all.
GFCF Cranberry Apricot Oat-free Cookies
This is originally a Penzey's recipe. I've replaced the coriander with cardamom and adapted it to be oat free as well as gluten and casein free because Megan is sensitive to oats. I just love using buckwheat in place of oats in my baking but if you don't, substitute 1 1/2 cups gluten free oats for the buckwheat. I also just love soft, chewy cookies and at first was afraid that these would be

GFCF Brown Sugar Butternut Pie
I have been a fan of this Cooking Light recipe for 10 years. Wow, I can't believe it's been that long! I fell in love with this silky squash pie before Anna was born...while DH was in grad school and I was working, and we had time and money to spend on dinner parties and hosting family for holiday meals. Having kids sure does change a lot, as does the discovery of food allergies and sensitivities

GFCF Pumpkin Spice Cake
I made this cake for DH's birthday. It drove the girls mad all day to look at the cake but have to wait until Daddy got home to eat it. This is the same basic recipe as Applesauce Spice Cake (adapted from Better Homes and Gardens), with just a few variations. I tried making homemade powdered sugar to frost the cake with - it went well until my blender broke! So it can be done and it will be

Grain-Free Meatballs with Red Wine Gravy
As I was looking for a meatball and gravy recipe the other day, I ran across a recipe for Braised Meatballs in Red-Wine Gravy at Epicurious. Originally I envisioned making something like Swedish Meatballs but decided this recipe looked better. I ended up trying it three ways - one with a white wine/mustard gravy served over turkey meatballs, one with the original red wine/tomato paste gravy and
Roasted Cauliflower and Garlic Puree
I've been on a roasted vegetable kick lately (see guide to roasting vegetables, yum!). I've made so much roasted broccoli in the past few weeks, it's a wonder DH has not said "enough already!". So in order to hide the fact we'd be having more roasted veggies the other night for dinner, I decided to serve up a puree instead. Actually I was intending to make a roasted cauliflower soup, but I
Guide to Roasting Vegetables
Lately I have been all about roasted vegetables...carrots, broccoli, cauliflower, sweet potatoes, onions, squash, etc. Roasting makes vegetables mellow and brings out their natural sweetness. Megan will actually eat roasted broccoli without hardly blinking, where she'll protest with steamed broccoli. I don't usually get too fancy...sometimes I'll add minced garlic during the last 10 minutes of

GFCF Pear Custard Pie
I've wanted to convert this recipe for over a year. Finally, it's done! This is another tattered recipe I got from a friend of a friend many years ago. As far as favorite pear pies go, this is neck and neck with spiced pear pie. I especially love this no-roll pie crust - it's not crumbly in the least and holds up well in the transfer from pie plate to serving plate. And it behaves nicely too

GFCF Pear Bread
This was originally a Penzey's recipe for Apple Bread. I tried it two different ways - one with pears and one with apples and some applesauce to replace half the oil. Our favorite was the one with the pears. If you'd like to use apples instead, grate 2 apples in place of the pears and nix the cinnamon sugar. If you'd like to lower the fat content, replace half the canola oil with 1/4 cup

Pear Cardamom Coffee Cake
Wow, I've been busy. It's been a week since I've posted a recipe and longer than that since I promised some pear recipes. Well here's one, at least. This particular recipe has been my very favorite pear cake recipe for several years. It's one of those awesome, treasured recipes I found at a local orchard. I just love making recipes that come from small family businesses, like I love buying
Xanthan Gum vs. Guar Gum
I've finally put my money where my mouth is and have been using guar gum instead of xanthan gum in my baked goods for the past few weeks. Xanthan gum is corn-derived where guar gum is not. I can see no difference between the two in my baked goods. I've been using 50% more guar gum as xanthan gum, so if a recipe calls for 1 tsp. xanthan gum, I use 1 1/2 tsp. guar gum and everything has been

GFCF Spiced Pear Crisp
Originally I wanted to turn this into a pie, but it was late in the day, the pears needed to be used right away and I didn't have the time to make a pie crust. And really, a crisp is just a pie without the crust. It only took about 15 minutes to throw together and it turned out great (so good in fact that the kids didn't get any of it because DH attacked it). I'm actually glad I didn't have

Love Affair with Pears
I love pears. Pears are an autumn fruit every bit as versatile as apples. The two are swapped easily in practically most every recipe that calls for one of them. Have pears but need applesauce? Pear sauce is perfectly lovely. Want to make Apple Pie but have too many ripening pears? Pear pie is divine. Want to make mashed potatoes and have an extra couple of pears kicking around? Mashed

This is a Williams Sonoma recipe, modified slightly. It is really good. It's versatile too. Have you visited the Post Punk Kitchen yet? You really should. It's a lot of fun. Isa Moskowitz turns old favorites into updated veganized versions, like Tempeh Helper. How great is that? I need to try it one of these days. My family can't do soy which sort of defeats the point, but the "cheese" sauce looks interesting. We also can't do gluten, but that didn't stop me from making Isa's

I was walking through Whole Foods the other week with a friend. We were there to get lunch as Whole Foods is the only place I feel comfortable getting prepared food anymore. I also love that they don't cook their

I tried cooking whole amaranth (which is used as a grain but is really a seed) for the first time last week. It's very easy to cook, similar to quinoa and millet. GFCF Onion Rings
My friend M makes really great onion rings. The first time she made them for me, I scarfed nearly half of them because it'd been so long since I'd had onion rings and hers were much better than I remember onion rings ever being. She showed me how to make them the other day and she let me borrow her really nifty George Foreman Fryer. I really love it - the basket spins and forces 50% of the oil

GFCF Egg free Chicken Nuggets
So, it's confirmed. My BFF's son is allergic to corn! Poor guy - I know how hard it is to avoid corn. All those boxes of Ian's chicken nuggets, etc., - the only pre-packaged gluten free chicken nuggets we can find that have no egg coating - rendered useless. I found myself thinking about this today as I was making chicken nuggets for my girls. I use my corn-free chicken nugget coating mix

Spaghetti Squash
I remember the first time my mom made spaghetti squash. She tried to get us kids all excited that a squash could be spaghetti too. We'd have none of it at first. Finally she said that was the only thing she made for dinner, so we may as well try it. With some tomato sauce on top, it wasn't that bad - it's pretty mild and doesn't have a big squash flavor. Now I'm a big fan. These days I like

GFCF Sandbox Cake
This recipe was recently featured in a Penzey's catalog. You can find the original recipe, which is called Cinnamon Supper Cupcakes, here. I like the name Sandbox Cake better - the kids think it's cute. I made this in a baking dish and served it as a coffeecake. Spice Rubbed Grilled Steak
This is a simple spicy rub for steak, but it would work well with pork too. I found this recipe in a South Beach Diet cookbook and tweaked it slightly. Nut Free Crumb Topping
I made this topping for a fruit pie made with a no roll pie crust, but it is an all purpose crumb topping that would also be good on anything that calls for a crumb or streusel topping. This particular topping, unlike my other All Purpose Crumb Topping recipe, has no nuts. It makes just enough to cover a deep dish pie with no waste.1 cup GF flour blend1/4 cup brown sugar1/2 tsp. cinnamon or 1/4

Another No Roll Pie Crust Recipe
This is a great recipe for sweet pies (I have another No Roll Pie Crust recipe for savory pies). It's great for those times when you really want to make a pie but don't have the time or energy to roll out your pie crusts. This will fill a deep dish pie plate with just a smidge left over. I made it with All Purpose Millet and Sorghum Blend - the millet is sweet and the end result is slightly

This used to be a blend I called Rice Flour Blend. I deleted that and made this up to make all my blends corn free. If you are looking for that old recipe, let me know and I'll email it to you. GFCF Spice Cookie Bars
This recipe comes from a Penzey's catalog of spices. I love Penzey's - their spices are great - if only they'd make their soup bases without wheat or soy! Chicken and Bean Burrito Filling
I found this recipe on the back of a package of phyllo dough. Don't worry, I made it sans phyllo dough. I modified it slightly, and I thought it was really good. While the girls and I were on vacation at DH's parent's house, his mom bought a butternut squash and put it on the counter. I eyed it for a few days and when she didn't do anything with it, I claimed it. (See what happens when you invite family over for a month? They abscond with your veggies!) I decided to roast a chicken with butternut instead of the usual potatoes and it was very good.

Homemade Baking Powder (Corn Free)
Did you know that cornstarch is added to the baking powder you buy at the grocery store? It's added to powdered sugar too. The starch absorbs moisture and keeps the mixture from reacting before you need it in storage. The addition of cornstarch proved consternating as I am trying to eliminate corn from my diet, but then I found out that making your own baking powder is very easy. I don't know

I like making a Crock Pot Chicken and saving the leftover broth to put into soup.2 tbsp. olive oil1 large onion, diced2 cloves garlic, minced2 carrots, chopped2 stalks celery,

GFCF Chocolate Layer Cake
This is another one of those recipes I have on a tattered 3x5 inch index card. I don't remember its origin...it might be a Hershey's recipe. It's been my go-to recipe for chocolate layer cake for many years. Since it has converted to being gluten and casein free just perfectly, it will continue to be my go-to recipe for many years to come.Megan's birthday cake...with strawberry jam between the

(Gluten-Free, Casein-Free, Soy-Free) Best Ever Chocolate Chip Cookies
The other day I ran across a recipe for 36 Hour Chocolate Chip Cookies at Gluten Free Girl. Boy, did they look good. And I loved that there was amaranth flour in the recipe. Amaranth is high in fiber, protein, calcium, iron and vitamin C (for nutritional content see here) and if you combine it with rice or corn flours, you get a complete protein as high in food value as fish, poultry and red meat

Skillet Flatbread
While searching for socca recipes that looked good, I came across this recipe here for skillet flatbread. It's made the exact same way as socca, but it uses different flour. Now that looked intriguing, so I tried it, using cornmeal instead of chickpea flour. It turned out really good, crispier than socca and reminiscent of a cracker. This recipe is easy and fast and definitely a keeper.

Socca (Chickpea Flat Bread)
I recently ran across a recipe for chickpea flat bread, also known as Socca. I made it, thinking it would be something like foccacia but I was wrong (the recipe advised baking it in a pan in the oven which threw me off). I didn't like it too much. There was too much going on with the recipe - garlic, cumin, coriander, cayenne pepper, salt. I might like it if the recipe were more simple. So I

Moroccan Soup (Vegan)
I found this recipe by Brittany Rice in a magazine recently. The sweet and savory elements in the soup intrigued me but I was not sure how I'd like it. So I invited some guests over (they are such wonderful test subjects) - if I didn't end up liking the soup then at least I would not have a whole pot of it left sitting around. Well everybody ended up loving the soup! In fact, to my slight

Cuban Black Bean Soup (Vegan)
This black bean soup is refreshing and light. Serve it with Marinated Rice and a salad, and you have a filling dinner that is simple but worthy enough to serve to guests. The original recipe for the soup can be found here.1 pound dried black beans2 tbsp. olive oil1 medium onion, diced4 cloves garlic, minced2 carrots, diced2 stalks celery, diced1 medium bell pepper, chopped (red, orange, yellow
Marinated Rice
Okay - this rice dish is so good I could eat it plain, all by itself, with nothing else to accompany it. It's supposed to go with Cuban Black Bean Soup, and I did indeed serve the rice with the soup, but the rice is a great stand-alone dish as it is. I've never really cared for rice too much, but I really like it prepared this way. The original recipe for the rice can be found here.1 cup

Black Bean Quinoa Burgers
Yes, I'm on a quinoa kick. I had some leftover red quinoa pilaf and really wanted to try another quinoa burger recipe - a black bean one I found here. So I threw the leftover quinoa into the food processor with a few other ingredients, and presto - DH gets something other than a salad for dinner! Yes, I've been tired lately and not cooking much. Hopefully DH will like these quinoa burgers
Crock Pot Chicken with Quinoa
I tried red quinoa for the first time today. It's interesting...it has a nutty taste, and the texture is firmer than plain quinoa. This makes it a good candidate for a crock pot dish. You can use either plain quinoa or red quinoa in this dish - either one will taste great. I feel like jumping up and down about this recipe - it's easy and fast, and for such a simple dish it's really yummy.

Quinoa Veggie Burgers
While searching for ways to use quinoa (because it's awesome and I love it), I came across this recipe for Quinoa Burgers at Enlightened Cooking. Hello, Yum! I only tinkered with the recipe a little bit. It's awesome. It is really, really good. I've always loved veggie burgers, but try finding the ones at the grocery store that are not made with soy! Impossible! These are super easy to

My Mom's Carrot Bread
This is one of my mom's recipes. It's old and tattered now. I copied it years ago from one of her old and tattered recipe cards. Even after making it GFCF friendly, it remains my favorite carrot bread recipe. This makes two loaves of bread - I always freeze one of them to enjoy later.4 eggs 1 1/2 cups sugar 3/4 cup canola oil1/2 cup applesauce 3 cups GF flour blend (I used this one) 2 tsp.

Fresh Berry Cobbler
The other day DH came home with a large container of strawberries. What better excuse than to make a strawberry cobbler? I threw in a pint of blueberries and the color of the baked fruit was a beautiful deep purple-red. It tasted as good as it looked! Fruit-based desserts like this are my favorite - even better than chocolate.

Chicken Soup with Dumplings
Yesterday I made a 4 pound, plain, no-fuss Crock Pot Chicken. It turned into Chicken Salad for the girls, Chicken Shawerma for DH and me, and the leftovers made Chicken Soup today. I am feeling under the weather today and there's nothing like chicken soup with dumplings to beat the under-the-weather-blues. I just got The Gluten Free Gourmet Cooks Fast and Healthy and decided to try her

Shawerma Dressing
There is a mediterranean grill in town that makes a most excellent chicken shawerma. A shawerma is meat slow-roasted on a skewer. Pieces of cooked meat (chicken, beef or lamb) are sliced off with a sharp knife and served with pickles, tomatoes and a garlic dressing. A shawerma sandwich is the meat all wrapped up in a pita with pickles, lettuce and tomatoes and the dip is served on the side.

French Onion Soup
I really like French Onion Soup - it's so easy to make and a good soup for when you are feeling under the weather (Megan can attest to this - she's getting over pneumonia and scarfed this soup up - I nearly fell over!). I used homemade beef stock for the soup I made last night and needed to add about an extra 1/2 tsp. pepper and 3/4 tsp. salt to the soup since my broth was low-salt. It also

GFCF Olive Oil Lemon Drop Cookies
A friend recently gave me a recipe for olive oil cookies, saying they converted easily to GFCF and were very easy to make. I love making drop cookies because they are easy and fast, and this recipe looked faster than most. I was intrigued by the use of olive oil in the recipe - it's different and it makes them healthier than cookies made with shortening. I played around a bit with the original

Casein Free, Soy Free Margarine
UPDATE: Earth Balance now has a casein free, soy free margarine that is available all year round! Anna misses toast with butter. So do I. Neither one of us really cares for ghee on our toast. A friend recently told me that Whole Foods has picked up an Earth Balance margarine that is vegan and soy free, but I have not been able to find it. Then another friend told me that there is a

Broccoli Salad
Whole Foods makes a really good broccoli salad available in their to-go section. I sometimes pine for it, but only rarely indulge as it's fairly expensive. This recipe comes pretty close to theirs - now I can make it at home for much less whenever the mood strikes. The recipe I used as my guide can be found here. GFCF Multi-Grain, Multi-Seed Bread
So, I have been without my bread machine for the past several days. My Breadman Pro has been a workhorse, baking bread faithfully at least once a week for over a year. But the pan and the kneading paddle became scratched and the teflon was peeling off. That's scary - the girls don't need to ingest teflon with their cashew butter and jam sandwiches! So I ordered a new machine (my only

GFCF Hot Fudge Sauce
This hot fudge sauce is super easy to make and it tastes so good. I found the original recipe at Heal ~ Balance ~ Live and modified it just slightly. My Mom's Zucchini Bread
My mom's recipe for zucchini bread is the best ever. I love quiche. As I was searching for other quiche recipes that don't use cheese, I came across this one at Gluten Free Heaven. It looked so pretty, and I really wanted to make a quiche for dinner. Butterscotch Pudding
This pudding is not heavy on the butterscotch - it tastes light (although it's not). The original recipe (here) is by Cooking Light, but I torpedoed the low-fat part of it. I used lite coconut milk to replace the dairy, but regular coconut milk would be nice too. I'm just not going to worry about the fat content in the recipe - since going dairy free my girls don't get enough fat in their

Kitchen Sink Fried Rice
I've tried several versions of fried rice over the years. Each time I tried, it seemed to lack "oomph". DH was never really impressed. There's been some leftover rice in the fridge for a couple of days and I thought I'd try again. I looked up another fried rice recipe and then decided to deviate from it. I wanted it to be a little interesting...it needed some zip. What I'm posting here is
Spring Chicken Soup with Quinoa
The other day I made Spicy (Vegan) Potato Curry and cooked some quinoa to go with it. I had some leftover quinoa and was mulling over options for its use when I found an appealing recipe in Eating Well for Spring Chicken and Barley soup. Rich Fudgy Brownies
I have not made these brownies in a long time. I thought they were cake brownies since there is a frosting recipe that goes with them. But they turned out dense, decadent and too rich for frosting. GFCF "Buttermilk" Ranch Salad Dressing
I love Ranch Dressing. Sadly, most of it is taboo...unless I make it at home! I used to make this with a combination of mayo and sour cream, but I tried it with just mayo and it really was pretty good. It fixes that ranch dressing craving, at least!2 tbsp. Curried Cauliflower Soup
This is a Penzey's recipe, modified slightly. It's a good soup for a cold, rainy day. Sweet Potato Falafel with Tahini Sauce
I miss falafel. I used to get fresh falafel pitas at a great Mediterranean cafe. The owner was half Syrian and half Italian and he made the most amazing food. When you broke open his falafel they were green on the inside, which was slightly alarming at first because I was used to the boxed stuff. But it tasted so good - not dry, and the tahini sauce that was served over top was terrific.
Buckwheat Granola
This is my favorite granola recipe. I've substituted buckwheat for oats, not only because I can't seem to find gluten free oats in local stores, but also because Megan is sensitive to oats. Buckwheat is not a grain and NOT related to wheat. It's a fruit seed that is related to rhubarb and sorrel. Buckwheat is high in fiber, protein, magnesium and lysine. It's also thought to be a prebiotic,

Cocoa and Fresh Fruit Coffeecake
We got treated to an ice storm of sorts yesterday. It rained all day, and it was cold enough that icicles formed on tree branches and such, but not on the roads.I didn't think much of this. But the trees here must not be used to the weight of even a weensy bit of ice, and they all began to droop, hang into the streets and drop their branches. So we stayed inside and since it was cold enough
